As black, why is pinning the f3 knight good in the Caro, but slightly inaccurate in the Slav?

Take my most recent game as an example:
This appears in many variations of these two openings. Pinning the f3 knight is basically always good in the Caro, and always suboptimal in the Slav... and yet I keep doing it in the Slav, because I don't understand the reasoning as to why a move like bf5 is better.
