It begins with 1.e3 d4 then 2.d3 e4. From what I know, it’s somewhat if a joke, but what do you think about it?

Learn the Pirc (with black) King's Indian Attack (white) instead if you want something cagey with counter attacks 
 
 
then when you reach around 1000-1200 level drop the fianchetto nonsense and learn something good... and after that no need to change until 2000

I don't think The Cow is a very good opening at all. Much as I like Anna Cramling, I think she created this opening mainly in order to increase her profile.

Anna Cramling suggested this opening to an online gaming player named tyler1, you can search him on YouTube. In one year he went from a rating of 100 to 1900 on chess.com in rapid time controls. Though as JohnnyErasmic has mentioned, it's not the ideal opening for white to play with.

Tyler1's progress in Chess is certainly remarkable. But I don't think it's attributable to the Cow opening.

She streams her otb tournaments live. I watched a GM play the cow against her in rated classical time control game during a tournament. He was aware of The Cow and just wanted to use her own invention against her for the fun of it. She was surprised he played it, of course. He got a bad game using it though if I recall correctly, but eventually turned the tables and defeated her.

There have been a number of players who have played the cow against Anna, but I suspect this more because she's a very attractive person, not because they genuinely rate it as an opening. Magnus Carlsen is particularly damning in his appraisal here:

I feel sorry for Anna here, when he says "... the cow opening... which I think is just stupid" she looks to be on the verge of tears here, although her relentless cheeriness just about covers it up. I wonder about Anna Cramling and how much she really enjoys her chess. Both her parents are grandmasters but I get the idea she is never going to match their achievements, no matter how much pressure she puts on herself.

All that said, although perhaps not the best analyst and theoretican, she's a major content creator who does a lot to raise the profile of the game.
