The Italian game is commonly taught to beginner players because of its relatively simple to grasp theory, and lots of tactical opportunities. It is a textbook example of the "open game", which features more dynamic play and less positional shuffling. Although not very popular in master play, it is very suitable for lower-level players.
The Caro-Kann is a more quiet opening than most players are comfortable with, and navigating its theory-heavy lines can be tricky for White. The main goal is usually to set up a very solid pawn structure and then quietly develop, while also exploiting weaknesses in your opponent's position. If you're looking for lines to play against the Caro-Kann, my personal favorite variation is the Exchange Variation, which goes: 1. e4 c6 2. d4 d5 3. exd5 cxd5.
Both the Italian and the Caro Kann are established openings with hundreds of years of study and master-level play put into them. It's unwise to criticize based on personal opinion or taste. Although, if it makes you feel better, I have a personal vendetta against the Scandinavian.
