I was watching candidates and was surprised by the fact that the players were repeatedly leaving in the middle of the game when it is there opponent's turn. Why do they do this?

It is good to take a walk away from the board and refresh your mind.  This is very common in chess tournaments.  Very few people sit at the board the entire time.  It is relaxing to take a couple minutes, walk around a little bit, check on other games, and generally rest for a moment.

Sometimes they have to go pee.  Maybe get some water or whatever they feel like drinking.  They might have a place for them to sit away from the board too.  Also, sometimes walking is good.

Apparently you've never played a 5-7 hour game. It would be very strange to never leave the board.
