You have to gather yourself. Why are you even playing bullet in first place? Chess require mental stability if you wanna make it. What happened in your games is not a representative of your skills rather your current mental state.

Ehhh. You're just not a fast player. Some GM's can't handle time controls like that either.

However, low elo rapid matchmaking is without doubt, ****infested**** with engine players playing moves that outclass you by x amount no matter your skill level--****or how it fluctuates on a move-by-move basis-- if you suddenly "stopped trolling" it with 300 elo level play, and gave it something a few hundred up.... It goes up by 1000, and let's you stay far enough behind that you still believe you can win-- this is important for cheaters; too many aborted games or resigns and they're flagged for analysis if I'm not mistaken. That's the only logic behind the "uncanny valley" style of robotic-human play it emulates. SO, if you play any 15-30 rapids and encounter something that just FEELS off about it's development... Play as HARD as you can and force it to make it's top engine moves, if they want the win. Then when they DO, and they WIN, with 000 on the performance review??? Report that. 
No one wants to be the one who deals the fart that we ALL smell; don't let the higher rated elo's dismiss you as having irrational insecurity-borne suspicions. Lot of gaslighting to spin the matchmaking as "obviously fair and equal, DUH". 
In this case, they're kind of right; cheating certainly still exists in some form across all variations and time controls, however the level of cheating necessary to beat the lowest elos in blitz, is clearly not so powerful, or either doesn't need to make all the moves with the engine on, in order to secure mate; therefore enough error margin that it precludes punishing everyone for mere suspicions that don't stand out when they do the analysis.

You should quit only after you lose 1000 games straight.

If you played only 10 games, you didn't even start training.

Your recent games are almost all bullet games. Plus one blitz game that you've won.

You probably shouldn't play bullet at that level anyway.

Just share some experience with you. The time you wanna quit chess may be the moment you are not satisfied with your performance over some chess games. This may happen due to some minor mistakes that should not occur in your level, or some fatal errors in a game that could be avoided with clear mind. All these happen especially when you are not in a good state.

According to my journey of chinese chess studying, this may due to the fact that you have played too much in a short time, packed with the moves in your mind and can no longer have a clear mind. Another reason maybe because of your energy level which can be affected by your diet and rest.

So I suggest you to free up some time going out to relax, unwind, everything not related to the tasks consuming your brain power. Eventually, perhaps you may feel better and get back to the chess board.

Same for me with blitz.

Ratings seem to be completely random. Nearly getting to 1200 but also crashing to 800. Either I lose 10 or more games in a row even at 9xx level or I win 10 games in a row at > 1000.

I can't just play like against real people in real life. There it is always changing. Some wins some losses. But not those really long losing or winning streaks like on chess.com.

It seems like an algorithm. Rating is nothing. Some GM could restart und would be 800 but going up. Another one is at 1300 in a tilt. Sometimes it seems I get to play descending rating players and win all the time. And then the complete opposite.

Rapid is a bit more stable though. I personally consider this the start level of real chess for most people. High Level GMs may also blitz. But for most it is more of a casino than chess. Seems more like luck or bad luck. 
So just play real chess and consider blitz and certainly bullet as some chess like fun game for most people below 2000-2500
