I started playing last month and I have steadily increased my 10 min rapid rating. Now chess.com keeps pairing me to stronger opponents (> 1200), and I am just hanging in these matches for dear life, especially in the middlegame. It will take some time to adjust to the better position play.

There is no best, but there are bad.
I've been playing for 4 months casually (and before these 4 months I've never ever really played a game of chess in my life) and i'm now at 700. If I grind a lot I can go up 100 in a week or so, but I like to take it slowly and steadily.

Tbh, below 1000 - stick to opening principles. There's no "one opening" that is best.

It took me 2-3 years to get very close to 2000 and it took me almost 4 years to actually reach 2000.

It is a shame that you didn't start playing chess as a kid. It is even a bigger shame that people who started after you and who are better than you didn't start playing chess as kids. I improved much slower than you. It took me 3 years to reach 1800 blitz, now, after almost 4 years of playing chess I am still at 1800 blitz (and 2000 rapid).
I started playing chess in July 2019 and as of the moment of writing this answer in April 2023 I am rated 2016 rapid, 1819 blitz on this website.

I know this is a subjective question based on individual effort, ability, dedication, etc - but typically, how long does it take to reach each milestone?
Example:
<500 (instantly)
500-750 (perhaps after a week or two of understanding some basic chess principles like controlling the center, not opening with A3/H3, etc)
750-1000 (1-3 months of play)
1200 (3-4 months)
1300 (5 months??)
1400 (6-8 months??)
and so on.
Or put differently, if you are rated 1400/1500 or beyond - after you reached 1,000. How long did it take you approximately to progress through each 100+ milestone?
I started playing Chess in February, and over the past 90 days have managed to improve my score from 670 to 1225, but I'd also say I've done a fair bit more than the average patzer when it comes to trying to improve (analyzing games, watching youtube videos, etc) but have no idea of the 'typical pace'.

800 ( 34 days or 1 month, 3 days)
900 ( 57 days or 1 month, 26 days )
1000 ( 76 days or 2 months, 17 days )
1100 ( 94 days or 3 months, 4 days )
right now still struggle at 1000-ish elo
constantly get forked by enemy pawn, outplayed by enemy tactics, misscalculate chess exchange when it include many chess position changes, struggle to visualize chess move/trade, very poor endgame knowledge.
hopefully in next couple weeks, i could overcome this obstacles and gain more elo.

Making progress is nice, but now that my rating is creeping up I notice that I must calculate moves a lot more now to keep up with opponents. It is nice to find strong moves, but it can be exhausting and time consuming too. These games were a lot lighter when I was an 800-rated player.

im not sure that i could climb that high, and i dont think i have perseverance like your.
honestly, i never expect to reach 1000 elo. couple months ago i dont even know castling rule or difference between pin with skewer
for now my target is stabilize my rating at 1100-ish, after that i will try to reach 1200 elo.
btw, did you have suggestion what daily exercise i should do and what chess knowledge i should learn to progress into next 100-200 elo?
because currently i arrange my chess train/learn plan for next month, any suggestion would be appreciated. my next month plan: do puzzle mate in 3-4, overloading, attraction, interference, and x-ray. have clear idea winning/draw condition on King-Pawn endgame
if i were to guess it takes a couple years to get to 2000, but if you have a good perk (i.e great/ strong memory, fast understanding, tactical spotting gift, never introduced to the london) you could get there in a year or less
it varies radically and there's not an average timeline. the more you play, learn and train the better you get though. some young kids can get up really fast and older folks can but it often takes longer for them too especially if they don't play a lot/train a lot or regularly.

13 days - 906- Better calculation, less blunders - 30/12/22
9 days - 1000 - Better calculation, very low piece blunders- 8/1/23

PLATEAU AHEAD!!!!!!!!!!
I became really frustrated , it was a huge back and forth between 900,1000 and 1050. Just couldn't break 1100.
3/4/23-1137- out of plateau- 85 days
HUGE RISE AHEAD-
5/4/23 - 1247- Actual calculation, better visualisation, more brilliancies, decent tactics, good bit of planning, attacks, some very very good ggs. Two examples- 1. I got a +18 advantage only positionally, with my MONSTER KNIGHTS. Computer told to sack the queen for both knights. 2. Both of us closed down the position to attack. But the position was so closed that no either of us could make any any ANY sort of progress. We agreed to a draw as we just couldn't do anything in the middlegame.
9/4/23 - 1314- Rating stabilized - 4 days.
Total- 237 days. From Sep 2, 2022 to Apr 9 2023.
Current Rating- 1359
Wow! Steady progress, a huge plateau and then a huge rise and then steady progress again. I do get tilted often tho when I throw games or get disconnected up 10 queens.
