Why do we put the king in check as opposed to just capturing the king? It’s very confusing!

King can never be captured. You win by having the king in check with no possible escape/no legal moves.

Also do checkmates only happen at least three tiles away from the edge?

Nope, checkmates happen all over the board. But the edges are most common.
