Book moves meaning(Chess analyzing)

Well everyone, the meaning of book moves is the one that who follows the opening or a normal move that is a pattern moves of one opening. Everyone! Writes forums abt other things of analyzing in chess games

Book moves are theory grabbed from chess opening databases.

Engines do not calculate those moves, so play instantly.

I may sound naive, but why exactly is it prudent to broadly apply "play instantly" to every possible opportunity to make a "book move"?

On occasion even engines need more time to find optimal continuations.
