Why doesn't he just take the knight? I think Black can recover from the queen raid that follows and end up better off than White.

6. Nxe5 fxe5 7. Qh5+ Ke7 8. Qxe5+ Be6 ... etc.

What follow-up do you see to the knight sac?

i don't see an immediate tactical follow-up, but strategically: the BK's in the center & White has an easier time developing. Don't know if it'll fully compensate for being a pawn down but seems like a good risk to take.

I agree.  Black is doing much better here after fxe5 than after 1 e4 e5 2 Nf3 f6 3 Nxe5 fxe5.

This knight sac is definitely unsound.

 

If the pattern recognition you are referring to is the sound knight sac that is taught as a response to Damiano's defence:

1. e4 e5  2. Nf3 f6  3. Nxe5

There is one huge difference: in your game, the black King has the d7 square. The lack of this option in the example listed just above is the very reason white is able to drag out the black King if he plays 3...fxe5.

 

In your game, I believe that rchopper is right in saying that black should retake on e5.
