I don't really understand your comments at 7...Nxf2. After a quick calculation, I think Black is simply a Knight down and its sacrifice proved to be bad.
On the other hand, I like your 11.Be3. 11.Qe3 would have saved the b2-pawn and white pawn structure but I think it's better to speed up developement of pieces.
I think we agree on the value of 11.Be3
Counting on pawns ( 1 Knight =3pawns) looks to me rather inadequate in such positions. White's advantage is large after 12.Nd2 and won't dissipate that fast : in an open position being a knight up + the bishop pair and black's king much more insecure than white's as you demonstrated it.
