But should we count the numbered moves since they aren't technically a name

Sure, it's kinda long!
One i've found which is actually suprisingly simple is
Englund Gambit Declined: Reversed Alekhine, Reversed Krebs, Reversed Mokele Mbembe Variation
I like that one
Looks like I'm late to the party... anyways, I searched up this after I found
"Sicilian defense Nyezhmetdinov-Rossolimo attack"
in a chess game. After looking around, I found
"Sicilian defense Nyezhmetdinov-Rossolimo attack, Fianchetto variation, Totsky attack"
in some youtube videos. However, in chess.com, it was shortened to
"Sicilian Defense: Nyezhmetdinov-Rossolimo, Fianchetto, Totsky Attack"
However, after inspecting a github page at https://eikamikiku.github.io/Chess-openings/ that said that the longest chess opening was
"English opening, King's English variation, Four knights variation, Bradley beach variation"
Thumbs up for the Hyperaccelerated Pterodactyl and Mokele-Mbembe!
Here are a few other long ones from my opening book:
Queen's Pawn Opening: Blackmar-Diemer Gambit, Rasa-Studier Gambit
King's Gambit Accepted: Lopez-Gianutio counter-gambit, Hein variation
King's Indian Defense: Sämisch, Bobotsov-Korchnoi-Petrosian Variation
Modern Defense: Pterodactyl, Benoni Gambit Accepted, Beefeater Variation
King's Indian Defense: Fianchetto, Yugoslav, Panno System
