In your honest opinion, what is the best type of checkmate you can possibly make in a regular chess game?
Yes, Smothered Mate.
Two knights cannot force a checkmate. They can checkmate, but there's no forced checkmate.

I guess that’s why it’s rarer then smothered mate, then.
#7, I think there is at least one involving a lone king and rook pawn. but it is extremely rare.

Not in the general case but there are rare cases where Two Knights can force Checkmate, that's why I think it's the best.
Mate delivered by a pawn that takes en passant.
According to GM Seirawan in one of his lecture in St. Louis Chess Club, a book made by Bobby Fischer contains only one tactical mating pattern which is Backrank Checkmate. GM Seirawan is amaze by the fact that the all time champion is a one trick pony.
Something brilliant, maybe flashy. How it comes is less important than getting there.
